Internationally renowned Grandmaster Eddie Chong (10th degree black sash) personally named Sifu Jerry Fong (7th degree black sash) and Sifu Jean-Pierre Francillette (7th degree black sash) as his successors of the Sacramento Wing Chun & Bak Mei Kung Fu Academy, which had been operated by Grandmaster Chong himself at that same location for over 40 years. Grandmaster Chong started practicing Wing Chun Kung Fu in 1969. Sifu Fong and Sifu Francillette are fully certified by Grandmaster Chong and are highly proficient in all aspects of Hong Kong Wing Chun (Ip Man lineage), Foshan Wing Chun (Pan Nam lineage), and Foshan Bak Mei (Li Yong Jian lineage). Both studied directly under Grandmaster Chong for over 25 years until Grandmaster Chong’s retirement in 2023. Grandmaster Chong still visits the school on occasion to further mentor both Sifu Fong and Sifu Francillette.

Hong Kong Wing Chun (Ip Man lineage)
Wing Chun was devised to enable smaller people to defend themselves against a larger or stronger opponent, and also to defeat practitioners of other martial arts by utilizing highly aggressive close-range offensive tactics and techniques. This is accomplished by training the sense of touch instead of relying on eye/hand reflexes and athletic ability. It is a highly organized means of teaching nearly anyone to be an effective defender.
Hong Kong Wing Chun was greatly popularized by Bruce Lee and was the first martial art that he studied.
Foshan Wing Chun (Pan Nam lineage)
Foshan Wing Chun is different from the popular Hong Kong Wing Chun style that was practiced by Bruce Lee and his teacher, Grandmaster Ip Man. The Foshan and Hong Kong styles are only two of the total eight styles or houses of Wing Chun.
Foshan Wing Chun style's theories on centerline, weight distribution, and movement are practiced differently from the Hong Kong style. Both styles subscribe to the same tactical theories taught by a common lineage, but implemented in different ways.
Grandmaster Eddie Chong trained Foshan Wing Chun under Grandmaster Pan Nam from 1990 to 2000. Grandmaster Pan Nam was certified by Mao Tse-Tung (Chairman Mao) as the "Top/Main Wing Chun Instructor" for the People's Republic of China.
Grandmaster Chong is one of the few instructors in the world to teach both Hong Kong and Foshan Wing Chun, and he integrated those practices and applications to complement each other.
Grandmaster Chong taught both of these Wing Chun styles (as well as Foshan Bak Mei) to Sifu Jerry Fong and Sifu Jean-Pierre Francillette over many years, and later named both Sifu Fong and Sifu Francillette as his direct successors.
Foshan Bak Mei (Li Yong Jian lineage)
Grandmaster Eddie Chong learned White Eyebrow Kung Fu while in Foshan, China, learning Foshan Wing Chun from Grandmaster Pan Nam. Grandmaster Chong was excited to integrate the White Eyebrow Kung Fu theories and practices as a compliment to his Wing Chun.
The White Eyebrow Kung Fu style was refined by a priest with white eyebrows (Bak Mei in Cantonese). The first known Grandmaster of this style was Cheung Lei Chuen.
White Eyebrow Kung Fu differs from Wing Chun in three main areas:
1.) Power is developed by body positioning, waist torque, and weight distribution.
2.) Footwork is referred to as "triangle footwork." The angle of attack is acute to the opponent's while maintaining the practitioner's own centerline.
3.) The development of power or "ging" occurs upon strikes to pressure points on the opponent.
Grandmaster Eddie Chong is one of the few instructors in the United States qualified to teach this rare style of Bak Mei (White Eyebrow) Kung Fu. Grandmaster Chong has complete endorsement to teach this from his Bak Mei Sifu, Li Yong Jian, of Foshan, China.
Grandmaster Chong taught both Sifu Jerry Fong and Sifu Jean-Pierre Francillette the complete Foshan Bak Mei Kung Fu system, and fully certified and endorsed them to carry on his teachings in Foshan Bak Mei Kung Fu (and also in Hong Kong Wing Chun Kung Fu and Foshan Wing Chun Kung Fu).

Sifu Fong and Sifu Francillette are against any form of bullying. As such, both emphasize that martial arts are for defense, and not for the bullying of others. Similarly, students are directed to encourage and help one another in class. Sifu Fong and Sifu Francillette strongly believe that this aids in the growth and development of each student.
In addition, Sifu Fong and Sifu Francillette have several years of experience teaching martial arts to special needs students, particularly in regard to Autism and Down Syndrome. The school has been recognized by the Alta California Regional Center of Sacramento as a martial arts instruction provider for those with special needs, which includes both children and adults.
